A bit more about carrageenan:
It’s a red seaweed which has been sustainably cultivated since the 1960s and requires minimal processing. This one is sourced from the USA. It replaces animal-based products. It has been used as a thickener for centuries and processing is mild.
It has previously been mistaken for poligeenan, aka ‘degraded carrageenan’, which is used in medical imaging applications and is considered a carcinogen. Poligeenan is not a food additive. Poligeenan and carrageenan are two separate compounds with different chemical properties and molecular weight. Carrageenan does not degrade into, or turn into, poligeenan during digestion because the necessary conditions (temperature and pH) do not exist in the human digestive tract.
